Grandma's Old Fashioned Tea Cakes

INGREDIENTS:

  • 1 cup butter
  • 1 3/4 cups white sugar
  • 2 eggs
  • 3 cups all-purpose flour 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract 


DIRECTIONS:

1. In a medium bowl, cream together the butter and sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Combine the flour, baking soda, salt and nutmeg; stir into the creamed mixture. Knead dough for a few turnns on a floured board until smooth. Cover and refrigerate until firm. 

2. Preheat the oven to 325 degrees F (165 degrees C). On a lightly floured surface, roll the dough out to 1/4 inch in thickness. Cut into desired shapes with cookie cutters. Place cookies 1 1/2 inches apart onto cookie sheets. 

3. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely. 


Irish Tea Cake

"This is a simple butter cake that is great with tea or coffee. Easy to make, pretty and very delicious."


INGREDIENTS:

  • 1/2 cup butter, softened
  • 1 cup white sugar
  • 2 eggs
  • 1 1/2 teaspoons vanilla extract
  • 1 3/4 cups all-purpose flour 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1/4 cup confectioners' sugar for 
  • dusting 


DIRECTIONS:

1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9 inch round pan. 

2. In a medium bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs, one at a time then stir in the vanilla. Combine the flour, baking powder and salt; stir into the batter alternately with the milk. If the batter is too stiff, a tablespoon or two of milk may be added. Spread the batter evenly into the prepared pan. 

3. Bake for 30 to 35 minutes in the preheated oven, until a toothpick inserted into the center comes out clean. Cool in pan on a wire rack, then turn out onto a serving plate. Dust with confectioners' sugar right before serving. 


Russian Tea Cakes I

"This is a family recipe that's been made at Christmas time by at least 4 generations. This year will be the first for number 5!!! 'Bubba' brought it with her when she came from Lithuania. I pass it on in the true spirit of this season!"


INGREDIENTS:

  • 1 cup butter
  • 1 teaspoon vanilla extract
  • 6 tablespoons confectioners' 
  • sugar 2 cups all-purpose flour
  • 1 cup chopped walnuts
  • 1/3 cup confectioners' sugar for 
  • decoration 


DIRECTIONS:

1. Preheat oven to 350 degrees F (175 degrees C). 

2. In a medium bowl, cream butter and vanilla until smooth. Combine the 6 tablespoons confectioners' sugar and flour; stir into the butter mixture until just blended. Mix in the chopped walnuts. Roll dough into 1 inch balls, and place them 2 inches apart on an ungreased cookie sheet. 

3. Bake for 12 minutes in the preheated oven. When cool, roll in remaining confectioners' sugar. I also like to roll mine in the sugar a second time.
